This zucchini hummus features prominently in many of my detox programs and it's also one of the recipes taught in the Introduction to Plant-Based Living Workshop.
I've taken out the chickpeas and used zucchini instead. I've also included a healthy dose of black tahini (which is what gives this recipe it's beautiful black colouring). Black tahini one of the richest plant-based sources of calcium, so it's a great addition to your diet, particularly for those converting across to a vegan or vegetarian lifestyle. It is also high in phosphorus, manganese, B1, B6, healthy fats and beneficial fibre - which helps maintain good digestion!
