There is nothing better than fresh, seasonal, juicy stone-fruit in the summer. And with such a seemingly short window of time that they are at their best, how to enjoy them? I am a Mauritian girl and love a little salt and chilli in just about everything, so fruit isn't an exception.
Try out this recipe while peaches are at their best this month, or use under ripe mangos or pineapple. A little coconut sugar makes our seasonal peaches even sweeter, with a sting of chilli and herbs to keep the dish savoury. With the perfect balance of sweet and spicy, it's perfect to take to a picnic lunch, dinner or just to enjoy at home.
*You can also omit the coriander leaves if they are not to your liking.
