Roasted sweet potatoes make a great snack or side dish, and if paired with the right toppings you can make a whole meal out of it.
Sweet potato isn't only delicious, it also promises a strong nutritional punch. It is a great source of fibre and contains a large number of vitamins and minerals including iron, calcium, selenium, B-vitamins and Vitamin C. One of the key nutritional benefits of sweet potato is that they're high in an antioxidant known as beta-carotene, which converts to vitamin A once consumed.
