Blueberry Coconut Chia Smoothie

I love starting my day off with a smoothie. They are light breakfast option when I don't feel in the mood for eggs, granola or toast; I can sip on it slowly as I'm getting prepared for the day ahead; it is chock full of nutrition and more importantly, absolutely delicious!

Below is one of my favourite recipes. The star ingredient is definitely the blueberries which truly are a superfood, or superfruit I should say!

Of all the berries, blueberries are definitely the most nutrient-dense. A one-cup serving contains 24% of the daily RDI (recommended daily intake) of vitamin C, 36% of the RDI for vitamin K and 25% of the RDI for manganese.

Blueberries are also a rich source of anthocyanins, which is the flavonoid responsible for this fruit's incredible health benefits.

Blueberries have the highest antioxidant capacity of all the popular fruits and vegetables.

Blueberries high level of antioxidant compounds enables the protection of cells against DNA damage, which helps prevent premature ageing and reduces the risk of cancer. They also reduce the risk of diabetes, heart disease, obesity and overall mortality. Its anti-inflammatory compounds have also been shown to have a positive impact on mood and memory

And that's not all. Blueberries are also a powerful prebiotic, which means including more of this superfood in your diet will ensure better digestive health. Studies show that blueberry consumption increases the numbers of bifidobacteria and improves gut integrity
