Rainbow Raw Salad with Beetroot

Embrace the Power of Raw with this Autumnal Beetroot Salad Recipe!


This vibrant salad is a symphony of textures and flavors! Earthy beetroot meets sweet apple and crunchy carrot, all dressed in a light garlicky lemon-olive oil dressing. Packed with vitamins, minerals, and healthy fats, it's the perfect way to elevate your lunch game and keep you energized throughout the afternoon. Plus, it's completely vegan and easily customizable!


INGREDIENTS (serves 2):

For the Salad:

  • 2 medium beetroots, peeled and grated

  • 1 carrot, peeled and grated

  • 1 apple (tart or sweet variety), cored and grated

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup walnuts, soaked and chopped (see tip below) For the Garlicky Lemon-Olive Oil Dressing:

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon lemon juice

  • 1 clove garlic, minced

  • Salt and pepper to taste


Instructions:

  1. Soak and Chop the Walnuts: To activate the walnuts, soak them in a bowl of water for at least 2 hours, or preferably overnight. Drain and chop them before adding to the salad.

  2. Grate the Vegetables: Using a food processor with a grater attachment (or a box grater) grate the peeled beetroots, carrot, and apple.

  3. Chop the Parsley: Chop the fresh parsley.

  4. Combine the Salad: In a large bowl, combine the grated beetroot, carrot, and apple, chopped fresh parsley, and chopped walnuts.

  5. Make the Dressing: In a separate bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper. Adjust seasonings to your taste.

  6. Dress and Serve: Drizzle the garlicky lemon-olive oil dressing over the salad and toss gently to coat all the ingredients. Serve immediately and enjoy the vibrant flavors of autumn!


Tips:

  • Hearty Twist: Want a more filling meal? Add a can of drained chickpeas, crumbled tempeh, or cubed cooked tofu on top of the salad!

  • Leftovers: This salad is best enjoyed fresh, but can be stored in the fridge for up to 1 day. However, the color and texture of the beetroot may change slightly.
